Cafec filter papers for pour over
The filter paper you choose changes how fast water drains and how much of the coffee's body and sweetness reaches the cup. Cafec makes cone-shaped papers in Japan, and the Abaca range blends Manila hemp, called abaca, with wood pulp. It is a favourite of people who like to experiment with their pour over recipe.
Abaca and Abaca Plus
The standard Abaca paper gives a clean, bright cup. Abaca Plus uses a finer crepe pattern on the paper with tighter spacing, which adds surface area and lets water flow faster. The result is a little more body and sweetness, because a few more fine particles and oils pass through. Neither is better than the other. It depends on the beans and what you want in the cup.
Picking a size
Filter papers must match the size of your dripper. A one cup paper suits small cone drippers, while the larger two to four cup papers suit the next size up, such as the Hario V60 02. Always check the size number on your dripper before you buy, because a paper that is too big folds over and a paper that is too small can slump into the brew.
Brewing tips
Rinse the paper with hot water before adding coffee to remove any papery taste and to warm the dripper. If your brew is draining too slowly, try a slightly coarser grind or switch to Abaca Plus. If it runs too fast and tastes thin, go finer or choose the standard paper.
