Motta Metallurgica coffee tools
Metallurgica Motta has been producing stainless steel kitchenware and professional items in Italy since 1967, and its coffee accessories have long been used in bars and hotels. The range here focuses on solid stainless steel levellers for the home barista.
What a leveller does
A leveller sits across the top of the basket. As you spin it, it spreads and flattens the grounds so the bed is level before you tamp. That helps reduce gaps and uneven density, which are the usual causes of channelling, where water finds a quick path through the puck. The depth is adjustable, so you can set it to match the dose you use.
Choosing the right size
Levellers are sized to the basket. A 58.5mm leveller sits flush to the edge of a standard 58mm basket. Some machines use smaller baskets, such as 53mm, and some use non-standard sizes, so measure the inside diameter at the top of your basket before you buy. If you are not sure what your machine uses, tell us the model name and we will check.
Using it well
Dose into the basket, set the leveller depth so it just skims the top of the coffee, and spin it a few times. Then remove it, tamp firmly and level, and lock in the portafilter. Give it a wipe after each use so old coffee does not build up in the adjustment.
