Yama cold drip coffee makers

Yama Glass makes Kyoto-style slow drip brewers. A tall frame holds three glass chambers: iced water at the top, coffee in the middle and a carafe at the bottom, with a valve that sets how quickly the water falls.

How the tower brews

Ice and water drop slowly through the grounds, then spiral down a glass coil into the carafe. Start with roughly one drop every second and a half and aim for a brew time of around four hours, with six hours as an upper limit before flavour can turn harsh. Use a medium to medium-fine grind.

Filters and upkeep

A paper filter sits on top of the ceramic filter in the coffee chamber, and a second paper filter can be added for a cleaner result. The ceramic filter and 25 cup paper filter packs are listed here as replacements. Rinse the glass after each brew.

Tips for even extraction

Water can carve channels in the coffee bed and leave dry spots. Wet the grounds in layers and open the valve fully for a few seconds at the start. Check the drip rate as the top chamber empties.

Choosing a size

The 6-8 cup tower suits a household. The 25 cup version suits cafés and events. Visit a showroom in Sydney, Melbourne, Brisbane, Hobart, Newcastle or Kiama, or order online.

Frequently asked questions

Aim for around four hours and keep under six, since longer brews risk bitter, over-extracted flavours. Brews commonly take three to four hours. The exact time depends on grind size, coffee amount and how quickly you set the drip.

A common starting point is about one drop every 1.5 seconds. As the top chamber empties and pressure drops, you may need to reopen the valve slightly to hold the same rate. Taste the result and adjust a little at a time on your next brew.

Medium to medium-fine is the usual recommendation for slow drip towers. Too coarse can run through too quickly and taste thin, while too fine can slow the drip and clog the filter. Adjust one step at a time between brews.

Add the grounds a few spoonfuls at a time and wet each layer with a spray bottle. Opening the valve fully for a few seconds at the start also helps the bed saturate evenly. Level the surface and keep the drip steady.

Paper filters are a consumable and need replacing regularly. A ceramic filter lasts longer but can be replaced if it is damaged or blocked. Both are listed here, including paper filters for the 25 cup model, so you can restock without buying a whole tower.
